ABC Salad (Avocado, Bacon & Chicken Salad)



It’s almost summer! When the weather gets warm, I tend to like to keep things in the food department fresh, light and simple.  That way, I have more time and energy to enjoy outdoor activities. I may or may not be guilty of spending a lazy afternoon in our pool and lounging about outside yesterday. 😉 This recipe I call my ABC salad because the A is for avocado, B is for bacon & the C is for grilled chicken.  Seriously, who needs croutons when you can have bacon?  Pair this salad with my cilantro lime vinaigrette, and you have one winning combination.


2 boneless skinless chicken breasts

1 teaspoon cumin

1 teaspoon smoked paprika

salt and pepper to taste

4 slices bacon, cooked and crumbled

1 avocado, sliced or chopped (be sure to squeeze a little lime or lemon juice on it after cut up – to prevent oxidization, and I also sprinkle it with a little salt)

1 roma tomato, sliced or chopped

1/4 cup red onion, chopped

1/2 of an english cucumber, sliced

salad greens,  washed, dried & chopped ( use whatever greens you enjoy)


1 recipe of my cilantro lime vinaigrette


Pound out chicken, until the breasts are the same thickness throughout. Season with cumin, smoked paprika, and salt and pepper.

Toss those on the grill, and grill 10 – 15 minutes per side, or until juices no longer run pink.

Let chicken rest on a plate for ten minutes loosely covered with foil. Then cut into strips.

Place washed salad greens in a large bowl, drizzle about half of the vinaigrette on the greens and toss coating well.

Assemble salad by adding the tomato, cucumber & onions to the greens.

Then top with avocado, chicken & bacon crumbles.

Serve reserved dressing on the side.
