This winter has been brutal. So to bring a little summer back into my life, I made my favorite blueberry vinaigrette. In late July my family loves to go blueberry picking. We tend to pick several pounds, and what we do not use right away we freeze. Then we can enjoy blueberry goodness whenever we want. Homemade salad dressings are easier than you think. Oh so much better than anything you can buy in a bottle, and way healthier for you. This one does involve a little bit of cooking but is way worth it in the end.
1 cup blueberries
1 cup red wine vinegar (cider, or white wine)
4-5 tablespoons honey
1-2 teaspoons thyme or basil
2-3 teaspoons Dijon mustard
1 1/2 cups canola oil
1 1/2 teaspoon sea salt
1 teaspoon fresh cracked pepper to taste
Place 1 cup of blueberries and vinegar in a saucepan. Bring to a boil, then reduce to a low simmer. Mash berries as they cook for 5-10 minutes. Cool and strain through a mesh strainer into a bowl.
Combine honey, thyme, salt, pepper, & mustard in the bowl with the blueberry vinegar. Whisk until blended. Add the oil in a thin stream, whisking continuously. If you have a mason jar add all ingredients to that and drizzle in the oil, put the lid on and give it a good shake to combine.
