Chicken Fettuccine Alfredo


Lately, things around here have been kinda chaotic, but in sort of a good way (it will be nothing but great once it’s complete).  The chaos stems from the decision we made to have some renovation work done around the house. Which is super exciting, and yet at the same time stressful.  Big decisions usually leave me a bit nervous, scared and more often than not excited over all the possibilities that lie ahead.  You know the ones: marriage, having children, adopting new pets/fur children, buying houses, cars, campers, saying fare thee well to toxic folk and living through renovations – are all decisions I do not take lightly.  I generally go into things well researched, with my eyes wide open and also fully knowing that life can not always be mapped out.  Those big decisions come with bumps along the way sometimes.  Lucky for me, one of those choices I made 14 yrs ago has been a great one – marrying my husband.  Now making the big decisions are easier having each others love and support to make and face them together.


Anyways, about the recipe already! Decisions, decisions…whenever I am faced with those big choices I always crave comfort food.  Somehow it makes these adjustments in life just a tad easier.  The other night I was feeling a bit annoyed over some things going on during this reno project.  Nothing in construction ever goes completely as planned, and I was starting to get perturbed by some specific instances.  I needed to take some advice from Elsa’s book and  “Let it Go”, which I did with the help of a comfortingly delicious plate of chicken alfredo. Growing up I was never allowed to have fettuccine alfredo, because my parents were always on some crazy health kick. I can still recall a particular instance in which my father glowered at my sister when she foolheartedly ordered fettuccine alfredo while we were at a restaurant. I can almost still hear him carrying on saying: “too much butter, cream, cheese and pasta.” “That’s a heart attack waiting to happen.”  Sure, I agree with him eating dishes like this on a regular basis will not be good for anybody, but once in a great while (for me it’s like maybe a twice a year thing) – it’s alright- everyone take a deep breath and relax.  I much rather any day of the week eat something made from scratch by me with real ingredients than any prepackaged chemical sludge.    With that said, go on and pass the fettuccine alfredo – just not too often!



1/2 cup butter (1 stick)

2 cloves garlic, minced

1 cup heavy cream

1 cup milk

1/2 cup grated parmesan cheese

1 cup chicken, cooked and cut into strips

salt and pepper to taste

1 package fettuccine noodles or any noodles of your choice, cooked per directions



In a large deep saute pan – melt the butter.

Add the garlic, cream, and milk to the butter.  Simmer on medium/low heat.

Then add the cheese, and continue simmering for 8-10 minutes until thickened, making sure not to boil. Season to taste with salt and pepper.


Add the chicken and cook another couple minutes.


Toss the pasta in the sauce, and then plate.
