Cilantro Lime Vinaigrette
I have never had much success with plants, unless something can make a noise to remind me of it’s presence I tend to forget about it. Don’t get me wrong, I love horticulture – and I have great fun rattling off plant names, flowers, etc as I see them (once upon a time I even took a floral design class, and could spend hours reading up on plants). My husband was determined this year to have a successful garden with or without my help. He even has a fancy new hat to wear while gardening. I have an unnatural love of fresh herbs and produce – so I saw his determination as a double bonus for me (especially since I did not need to be involved). I must admit I find myself out checking on the garden every day, weeding and checking on the progress of my precious herbs especially (shhhhh….don’t tell him though). The recipe I am about to share has beautiful fresh cilantro that I picked today. Did I mention I LOVE fresh herbs? This recipe is perfect tossed on a salad bed topped with grilled chicken, red onion, cucumber and avocado. I hope you enjoy it!
5 tablespoons white wine vinegar
3-4 tablespoons honey
2-3 teaspoons dijon mustard
the juice of one lime
1 tablespoon fresh cilantro, chopped
1/2 cup sunflower oil
1 -1/2 teaspoon salt
1 teaspoon pepper
In a bowl combine the vinegar, honey, mustard, lime juice & cilantro.
Slowly drizzle the oil into the bowl whisking constantly. Salt and pepper to taste.
