Cookie Dough Truffles

I’m relatively certain that it’s a rule for every child (even those who masquerade as adults) to steal a few bites of cookie dough.  The only problem is those pesky raw eggs… Never fear cookie dough lovers,  this is a sweet treat just for you! It has all the yummy creamy-gooeyness of an unbaked chocolate chip cookie, without the fear of food poisoning, and it’s packaged in the form of a pretty little truffle.

Cookie Dough Truffles
Makes around: 5 dozen

1 stick of butter softened
3/4 cup of brown sugar
1 teaspoon vanilla extract
2 cups of all purpose flour
1 can (14 oz) of sweetened condensed milk
1/2 cup of mini-chocolate chips
1 1/2 bags of chocolate candy melts

1. Cream butter in a stand mixer or with a hand mixer until light and fluffy then add sugar and continue to cream until it’s incorporated and fluffy.

2.  Add Vanilla Extract and beat.

3.  Alternate adding flour and condensed milk beating after each addition until fully incorporated.

4. Stir in chocolate chips.

5. Form into small balls, and put on a cookie sheet.  Place cookie sheet with truffles in the fridge or freezer until they firm up.

6. Melt candy melts according to package, then dip the cold truffles into the chocolate to coat.  Transfer onto wax paper and add sprinkles.

7. Let harden, then enjoy!
