As I mentioned before, I am a big fan of cajun/creole foods. In turn making it a personal mission to learn how to make all my favorites here at home. I also like to find & develop new rice recipes since my family really enjoys rice. To make this recipe milder if you do not care for heat substitute 1/4 -1/2 cup of green bell pepper for the jalapeno.
2 cups long grain white rice, prepared per package instructions
3 slices bacon
1/2 lb ground beef
1/2 cup onion, diced
1 stalk celery, diced
1 jalapeno, seeded & finely diced
1 tablespoons vegetable oil
1 cup chicken stock
1 tablespoon cajun seasoning
salt and pepper to taste
After cooking the rice by the packaged directions. Pour rice out onto a large sheet pan and drizzle with 1 tablespoon of the oil to prevent it sticking together.
In a large pan cook the bacon. Once the bacon is cooked remove from the pan and drain on a paper towel. Crumble the bacon.
Add the ground beef, crumbled bacon, onion, celery & jalapeno to the pan. Season with salt & pepper.
Once the beef is browned and broken up with a wooden spoon, and veggies are softened. Deglaze the pan with the chicken stock – by scraping the browned bits at the bottom of the pan with a wooden spoon.
Add the cajun seasoning – then boil until most of the chicken stock has evaporated.
Then add the cooked rice. Toss until combined.
Serve and enjoy!
