Grasshopper Pie

My husband, oldest son & daughter really like the flavor combination of mint and chocolate. I have several recipes up my sleeve that combine that particular flavor combination, and this recipe is one of them. I have been making this pie since my kids were toddlers, and have never heard any complaints about it – just the perfect sound of silence as they gobble it up. This recipe is very easy, has minimal ingredients, and is no bake. The oreo crust is so delicious, and can be used to make other flavored pies – the options are limitless.

Ingredients:

Crust:

24 oreos (ground into coarse crumbs in a food processor)

1/4 cup butter, softened

Pie Filling:

1 (5.1 oz.)pkg. instant vanilla pudding, prepared per direstions

1 1/2 cups cool whip topping

4 drops green food coloring

1/2 cup creme de menthe candy pieces

1/2 teaspoon mint extract

Topping:

1/2 – 1 cup cool whip

1/4 cup creme de menthe candy pieces (for garnish)

Directions:

In a bowl combine the oreo crumbs with the butter. Press evenly into a 9 or 10-inch deep pie plate.

Refrigerate crust for 1 hour before filling.

Prepare pudding in a large bowl.

Fold in the cool whip.

Add the mint extract.

Then add 3-4 drops green food coloring, and blend.

Fold in the creme de menthe pieces.

Pour into prepared oreo crust.

Top with the remaining cool whip, and sprinkle creme de menthe cany pieces on top.

Refrigerate or freeze until set up.
