Grilled Pizza – Two Ways


It’s no secret that we enjoy pizza immensely at my humble abode.  What makes for a delicious pizza – depends on who you ask.  I have a child that is not a fan of most tomato based sauces, and there is an ongoing list of other such  special requests from each member of my dear family. Which makes it difficult to say the least for all of us to share one pizza.  I have found a loophole though in this :dances my victory dance:…….grilled chicken pizza…not one but two types: BBQ grilled chicken pizza, and pesto grilled chicken pizza.  I use my pizza dough recipe, pesto, and K.C. BBQ sauce previously shared on the blog.  No complaints are uttered by any of my sweet family – just happy bellies and happy faces.  Which is definitely a win for me.  Hope you enjoy these recipes with those you love.


1 recipe pizza dough, made per directions, and divided into two equal parts

1 recipe pesto sauce

1 recipe BBQ Sauce

2 chicken breasts (each cut in half, and pounded out into the same thickness)

2 teaspoons herb de provence

2 teaspoons your favorite bbq rub (we make our own, I will post it up when I get a chance)

salt and pepper to taste

1/2 cup fresh chopped spinach

4 slices bacon, cooked and crumbled

1 cup cheddar cheese

1 cup mozzarella cheese


Prepare pesto, and bbq sauce ahead of time even a couple days in advance these recipes only call for a bit of each so use the rest for other dinners that week.

Start pizza dough, and let it do it’s thing.

When the dough is close to done- start preparing the chicken. I salt and pepper both sides of all four, and two of the breasts get herb de provence seasoning (those will be for the pesto pizzas) and the other two get the bbq rub. Toss those on the grill 7-10 minutes per side or until juices run clear. Remove from the grill and let rest on a plate.

Clean grill grates, removing any debris.

On a lightly floured surface roll out dough into a large round.

slice chicken into strips set aside.

Heat grill to medium heat, and brush one side of the pizza dough with 1-2 teaspoons olive oil, placing that side down on the grill. Cook 2-3 minutes.

Brush the raw side of the dough with a couple teaspoons olive oil, and flip. Add desired amount of pesto, herb de provence chicken slices, spinach & mozzarella cheese.

Close the lid and cook another 2-3 minutes until cheese is melted and the bottom is golden brown.


Do the same steps for the other pizza, just add bbq sauce, bbq rubbed chicken slices, bacon crumbles & cheddar cheese.
