Luscious Lemon Bars
Certain recipes get me really excited for spring. One such recipe would have to be my lemon bars. I make these little gems every spring, and even my husband that claims to not like lemon devours these bars. They are very easy, and are perfect for any luncheon or tea party. From the heavenly buttery shortbread base, to the delicate lemony filling, and the light dusting of powdered sugar to top it off. These bars are perfection. One can never go wrong with a shortbread base in my book. Happy Spring!
1 1/3 cups all-purpose flour
1/4 cup sugar
1/2 cup butter, softened
3/4 cups sugar
2 tablespoons all-purpose flour
1/4 teaspoon baking powder
2 tablespoons fresh lemon juice
powdered sugar for dusting on top
Preheat oven to 350° F.
Combine all crust ingredients in a bowl, until the mixture resembles coarse crumbs.
Press crust mixture evenly in the bottom of a 8-inch square baking dish.
Bake for 15 minutes. Or until the edges start to turn a light golden brown.
Combine all filling ingredients in a bowl.
Pour filling over the partially baked crust
Bake for 18 minutes or until set.
Remove from the oven, and sprinkle with powdered sugar.
Allow to cool completely before cutting into squares.
