Ooey Gooey Cinnamon Rolls

This post has been a long time coming.  Every time we make these babies they are gone before I can snap any shots.  I think that speaks volumes to how fantastic this recipe really is.  These are so ooey, gooey, and sinfully decadent. Everything a cinnamon roll should be in my opinion.  Oh, and the cream cheese icing is phenomenal too.  So, put away that can of store bought cinnamon rolls, and enjoy these glorious rolls.

Please forgive that the photos are not the prettiest.  They were taken while we were on a camping trip, and being the organized person that I am (not really, just seeing if you’re paying attention) 😉 we pre-made the cinnamon rolls ahead of time, and placed them in a foil baking tray for convenience. Seriously, who wants to do extra dishes while camping – not me.  It was the first time in 2 years of ownership I used my camper oven.  I was told it was mainly for storage and not so much suited for it’s original purpose, by our RV salesman when we bought our camper.  I am pleased to say he was wrong.  Our camper oven worked wonderfully for these cinnamon rolls, and I look forward to the added cooking options now available to me provided by our camper oven.

Ingredients:                                    Yield: 12 healthy sized cinnamon rolls

Dough:

1/3 cup butter, melted

2 large eggs

1 cup milk

1/2 cup white sugar

4-1/2 cups all-purpose flour (or bread flour)

1 teaspoon salt

2-1/2 teaspoons bread machine yeast

 

Filling:

1 cup light brown sugar

2 tablespoons ground cinnamon

1/3 cup butter, softened

 

Cream Cheese Icing:

2 ounces cream cheese, softened

7 tablespoons butter, softened

1 teaspoon vanilla

2 tablespoons milk

1-1/2 cup powdered sugar

1 teaspoon cinnamon

Directions:

Place all dough ingredients in your bread machine pan.  Or in the order recommended by your machine.  Select the dough cycle, press start & let it rock and roll.

After the dough cycle has ended, and it’s doubled in size.  Turn the dough out onto a floured surface, and let rest 10 minutes.

In a bowl combine the cinnamon and brown sugar.  Grease a 9×13 baking dish.

Roll the dough out into a 16×21 inch rectangle.  Spread the butter all over the top and sprinkle with the cinnamon sugar mixture.  Roll the dough up, and slice into 12 equal slices. Place in greased baking dish.

Preheat oven to 350°F.  Cover and let rise for about a half an hour or until doubled in size.
Bake 25-30 minutes or until golden brown and completely cooked through.
While the rolls are baking, in a mixer cream the cream cheese & butter. Add the cinnamon, vanilla & milk.  Gradually adding the powdered sugar until smooth, light & fluffy.

    Making these now and can’t wait to see how the turn out bc I love soft, gooey, doughy cinnamon rolls. I am not a fan of cinnamon rolls that are dry, crunchy on the outside edges and barely soften due to the icing. These look amazing.
