Peppermint Hot Chocolate
Mmmm……. What is more inviting on a blustery winter day than a delicious mug of hot cocoa? I love hot chocolate, I mean I really LOVE the stuff this time of year. It is so comforting, and always brings a smile to my face. It has a way of conjuring up childhood memories of carefree days spent playing in the snow. This recipe is a peppermint version (which I think is perfect for the holiday season). You can make it without the peppermint, and it will just be regular hot chocolate. Either way, you can’t go wrong.
4 cups milk
1 cup semi-sweet chocolate chips
finely crushed peppermint candies, canes or sticks (about four candy canes, and a little more for garnish)
reserved crushed peppermint
Place the four cups of milk in a saucepan. Heat over medium-low heat. Do not boil. Whisk in chocolate, and crushed peppermint until smooth.
Ladle into mugs. Garnish with whipped cream, crushed peppermint & the peppermint stick for stirring.
* Note-If the chocolate flavor is too rich for your taste you can dilute it with another 1/2 – 1 cup of milk.
In place of the crushed peppermint you may add a few drops of peppermint oil.
