Pork Tenderloin (Slow Cooker Recipe)
I love this recipe, because it is not only delicious – but so stinkin’ easy. Seriously, it’s as simple as tossing a few ingredients in your slow cooker, turning it on high or low, and going about the rest of your day. Then come dinner time all you need to do is whip up some sides, and you are good to go.

Pork tenderloin (I get the two packs from Costco, and use one of those. Have I mentioned my unholy love of Costco before?)
1 cup chicken stock
1/2 cup balsamic vinegar
2-3 tablespoons honey
1 teaspoon thyme
1 teaspoon parsley
1 teaspoon basil
salt and pepper to taste
Place the pork tenderloin in your slow cooker.
In a bowl stir all other ingredients, and then pour over the pork.
Cook on high 4-6 hours or on low 8-10 hours.
The juices can be reduced, and made into a sauce or gravy.
* Side suggestions: I serve mine with sides of mashed or roasted potatoes, and green beans or peas
