Smoked Pork Chops with Apples, Onions & Bacon
I recently returned from a delightful, but much too brief visit to Arizona. My husband had a business trip, and one of my friends recently moved out that way – so I tagged along and had a nice time catching up with a friend that I have been missing (she is so funny, and has such a wonderful no nonsense personality – that I find refreshing). We dined, we shopped and my husband worked (lucky him);). The western charm of the area is undeniably enchanting, and I must admit I am pretty enamored with it. The scenery alone is breathtakingly beautiful, and looks like something straight out of a painting.
But after all the dining out, I am always excited to be back home in my own kitchen serving up and creating delicious things. Don’t get me wrong, I love experiencing new restaurants, and not having to always be the one cooking. Which by the way, I had some amazing food while away. I even was able to try In-N-Out burger for the first time. My husband’s coworker suggested we all go for dinner, because he ranks it as his #1 burger. I am never one to turn down a burger experience – so we went and had a fun time hearing about how he plans his routes when he travels out west according to where the In-N-Out Burger establishments are located. To be completely honest, there are few things I love more than a good burger (It’s an ongoing joke between my husband and myself of what a cheap date I am) so this dinner choice worked for me.
When we arrived back home I was hit immediately by the cold winds of Chicago, the rustling leaves and the brisk Midwest autumn had once again taken hold of my spirit. Thus leaving me wanting to make a fall inspired dish as our first dinner back home. Luckily, I had just the one in mind, smoked pork chops with bacon, apples & onions. Mmmm it’s so good, and to make things even better it’s a dish I’ve prepared so many times I can do it semi conscious. Which is about all my brain could handle at the moment. I hope you enjoy this fall favorite of ours!
1 package of smoked pork chops
5 slices of bacon
1/2 an onion sliced thinly
1 apple sliced thinly
salt and pepper to taste
In a large skillet cook the bacon.
Once the bacon is cooked remove from the pan and place on a paper towel lined plate.
Cook the onion in the bacon fat for a few minutes until softened, and then add in the apples. Salt and pepper to taste.
Once they apples are softened remove the onions and apples from the pan, and place on a plate.
Put the smoked pork chops in the same pan and cook until heated through turning to get a little color on both sides.
Add the onions and apples back to the pan, placing on top of the chops. Then crumble the bacon over the top.
Serve and enjoy!
