Spinach Gratin


This recipe is delicious! I challenge anyone who thinks they do not like spinach to give this recipe a try. It definitely will not be winning any accolades for being a healthy dish, but as I stated before it is amazingly good. Holidays are not holidays in my household without spinach gratin. The few times I have not made this dish on Thanksgiving, Christmas & Easter I have been met with sad eyes by my husband. So now it has become a staple on our holiday table. I seriously do not like to disappoint…especially on holidays. I hope you try this recipe, and it becomes a welcome addition to your holiday table as well.


1/4 cup of butter (1/2 stick)

1/2 cup onion, chopped

1/4 cup flour

1/4 teaspoon grated nutmeg

1 1/2 cups heavy cream

1 1/2 cups milk

2 (9oz.) packages of frozen spinach, thawed and squeezed out the excess water

1 cup parmesan, shredded

1 cup asiago, gruyere or any other white cheese you like

salt and pepper to taste


Preheat oven to 425° F.

In a large saute pan melt the butter.

Cook the onion in the butter, until translucent about 10-15 minutes.

Stir in the flour and nutmeg for about 2 minutes.

Add the heavy cream and milk. Cooking until thickened stirring out any lumps that form.

Stir in the spinach.

Add 1/2 cup parmesan and 1/2 cup gruyere.

Season with salt and pepper to taste.

Pour into a baking dish.

Top with remaining cheese.

Bake 20 minutes. Until browned and bubbly.
