Toffee Studded Shortbread



I am pretty sure that I have mentioned before my weakness for shortbread…..but if you have forgotten I will gladly refresh your memory –  I LOVE SHORTBREAD!  It’s clean buttery melt in your mouth qualities leave me weak in the knees!  This recipe is one that  I simply can’t get enough of, and am happy to share with you.  Hope you give this one a try!




1 cup butter, softened

1/2 cup sugar

2 cups all-purpose flour

1/2 cup chocolate covered English toffee bits



1 cup powdered sugar

1-1/2 teaspoons vanilla

2-3 tablespoons milk



Heat oven to 350°F.  In a large bowl cream the sugar and butter.  Stir in the flour until just combines (it will look like coarse crumbs).  Fold in the toffee pieces.

Press into a 13×9 inch pan, and bake for 20-25 minutes or until edges are just lightly browned.

Cut into desired shape while still hot.  Cool a few minutes.

In another bowl whisk powdered sugar, vanilla and add the milk slowly to achieve the right glaze consistency.

Drizzle the glaze over still warm shortbread.

Allow to cool completely, and enjoy!
