Zucchini fries, zucchini fries….hmmm…that’s not the first thing I think of when I hear the word fry. Also, couple that with the fact that there is no actual frying involved in this recipe at all, I guess I am just referring to the shape. The zucchini is first peeled, cut, then dipped in egg, coated in a breadcrumb mixture and baked in the oven until golden brown and crisp. Dipped in your favorite marinara, ranch or plain – they are delicious.
2-3 descent size zucchini
2 cups of breadcrumbs (I used Italian seasoned)
1/2 cup grated parmesan cheese
salt and pepper to taste
Preheat your oven to 375°F. Line a baking sheet with foil, and set aside.
Wash zucchini, peel and then cut.
Whisk the eggs in a bowl and season with salt and pepper
In a separate bowl combine breadcrumbs and cheese.
Dip zucchini in the eggs and then coat with the breadcrumb mixture.
Place the breadcrumb coated zucchini pieces on the baking sheet.
Bake 15-20 minutes or until browned and crisp.
